Fall Activities

Part-way through our recent ministry tour, we had a short 'lay-over' at our home. Just enough time to harvest like crazy as we discovered oodles of treasures in our garden! Isn't harvest a most wonderful time of the year?!

It was super wet and muddy, but that didn't dampen our spirits as we discovered the many treasures from our fall garden. Such fun!

Our quest to grow watermelons has never been successful. But somehow, this year was different -- we found over 50 large watermelon in our patch! Yummy!

Tomatoes were in plentiful supply, too, so canning took on a new urgency. There's nothing quite like seeing a whole shelf full of homegrown veggies, just waiting to be enjoyed during those cold winter months!

We just finished harvesting our crops as well. It’s so exciting and rewarding to reap the harvest of your labor!

It looks like your harvest was plentiful! Our garden didn't exactly produce a lot this year, but it was a good learning experience. =) Those watermelons look delicious, as does all of the rest of the goodies. The joyful smiles in the pictures brought joy to my heart!

WOW guys looks amazing!!! That time of year is always fun but very busy, we're always combining at the same time so whoever is not in the combine, grain cart, or truck gets to take on the task of canning!:) Our garden froze in the middle of September and we are really missing it. Our shelves are full of bright jars thought and it promises to be good eating this winter. W had our first snow this afternoon but it was only a little bit. The long winter months are just around the corner!:( Miss you guys a bunch!!! Love, Jody

Fat-Free Watermelon Sherbet
5 C cubed, seeded watermelon,
1/2 C sugar, 1 envelope unflavored gelatin, 1/3 C cranberry juice
Puree watermelon in blender or food processor. Stir in sugar. In small saucepan combine gelatin and cranberry juice. Let stand 5 min. Stir over low heat until gelatin is dissolved. Stir gelatin mix into melon. Pour into 8x8 dish. Cover and freeze about 2 hrs. until firm. Break up frozen mixture. Place in chilled mixing bowl. Beat with a mixer on medium to high speed until fluffy. Return to pan. Cover and freeze about 6 hrs until firm. Let stand at room temp about 5 min before scooping. Enjoy. Aunt D
